Tonight, dinner is going to be one of my favorite combinations: Roasted Sweet Potato & Cherry Tomato Salad. It's fragrant, filling, juicy...delicious! As always, this is a minimalist recipe that just requires a few ingredients and 25 minutes of roasting. I used butter lettuce this time because it was what I had in the fridge, but any green would work just as fine.
