I've been drooling for a long time with all the photos of mug cakes that my girls post on Instagram...
Today I decided to try my own mug cake. As I couldn't decide which mug to use (some people have troubles deciding what clothes to ware in the morning, I have troubles deciding which mug to use...am I normal?), I decided to go with the coffee cups and I made these delicious Shot Cakes...
Oats, almond milk, carob powder, vanilla, apple and coconut sugar for sweetness (it is an healthier alternative to refined white sugar as it has lower GI and also contains iron, zinc, calcium, antioxidants, some short chain fatty acids and some fiber in it).
These Shot Cakes are so incredibly easy to make that it's hard to believe...You just need to mix everything and place it in the microwave for 30 seconds and that's it! I think they are great for a party with friends or for whenever the "ugly monster" attacks (I talked about the ugly monster before, here...).
Apple Carob Shot Cakes
Preparation Time: 1 minute
Baking Time: 30 seconds

Nutritional Information (per Shot Cake): 60 Kcal, 1.2 g protein, 13.8 g carbs, 0.7 g fat
3 heaping tbsp Oats (or 3 normal tbsp oat flour)
1+1/2 tbsp Carob Powder (or Cacao Powder)
1 heaping tbsp Coconut Sugar (or any other natural sweetener)
3 tbsp Almond Milk (or other vegetable milk)
1/4 tsp Baking Powder
1/4 tsp Vanilla Powder
1/4 Apple, finely chopped
1. Place the oat flakes into the food processor and process until they turn into a fine flour. Alternatively, you can use ready-to-use oat flour. Transfer it to a small mixing bowl.
2. Add in the rest of the ingredients except the apple and mix to combine.
3. Chop the apple into small pieces and place a few on the bottom of each coffee cup.
4. Cover it with the prepared batter, filling each coffee cup up to the middle. Put it in the microwave and bake it for about 30 seconds. Garnish to taste and serve.
