Bananas are just bananas. Coconut is just coconut. Chia seeds are just chia seeds. No preservatives, no colorants, no antioxidants, no thickeners.
There are so many natural flavors in Nature that we can play with that sometimes it is hard to chose what to use. The banana-coconut-chia triad would work perfectly by itself but I looked to an orange shinning in my fruit bowl and I couldn't avoid using its zest. Then I remembered how orange and cinnamon match perfectly and I decided to include a pinch of cinnamon too...I forced my self to start preparing the pudding before I started thinking about another ingredient to add, which could have ruined this sweet perfection.
This pudding is ready in literally 5 minutes. It just requires processing bananas with chia seeds and cinnamon and incorporate shredded coconut and orange zest.
I saved some shredded coconut and orange zest to sprinkle on top of the pudding to further excite the taste buds...
It made two servings of pudding, one for me and another for J. Then I found the leftovers of the Blackberry Jam in the fridge that I made yesterday and I decided to use it in one of the puddings.
Fortunately, J. was still full from lunch so I got to enjoy both puddings! I have to confess: I really love to share my food with others but sometimes I'm just hoping that the other person says 'No, thank you', so I can have ALL FOR ME! Does that make me a bad person?
The Blackberry Jam contrasted perfectly with the sweetness of the pudding from the bananas and the coconut. It was definitely a good choice.
Banana Coconut & Chia Pudding

2 ripe Bananas
2 tbsp unsweetened shredded Coconut
1 tbsp Chia Seeds
1 tsp ground Cinnamon
Zest of 1 Orange
1 tsp unsweetened shredded Coconut
1 tsp Orange Zest
2 tbsp Blackberry Jam (recipe here)
Method of Preparation:
1. Chop bananas and transfer them to a food processor along with chia seeds and ground cinnamon. Pulse until a smooth consistency is obtained.
2. Transfer to a medium mixing bowl and fold in shredded coconut and orange zest.
3. Pour into two serving bowls and scoop Blackberry Jam on top if desired.
4. Sprinkle with extra shredded coconut and orange zest. Let it cool down for about 20 to 30 minutes in the fridge and serve.
