The truth is that this Avocado 'Chocolate' Raw Vegan Mousse freezes perfectly maintaining its creamy consistency without getting too hard, just like the real stuff we by in the supermarkets! It is easy to scoop into ice cream bowls and holds its consistency without melting too fast.
'Chocolate' Mousse Raw Vegan Ice Cream
Serves 2-3 cups

2 ripe Avocados (avoid over ripe or they will taste funny)
10 small dried Figs, pre-soaked
1 cup Water (to soak figs)
1/3 cup Carob Powder
1/2 tsp Vanilla Powder
1 tsp Almonds, finely chopped
Method of Preparation:
1. Remove hard stems from dried figs and let them soak in water for 30 minutes to 1 hour.
2. Drain figs and squeeze them with your hands to remove excess water and put them into the food processor. Add in carob powder, vanilla powder and the flesh of the avocados.
3. Process the mixture until very smooth. Scrub the walls of the food processor when necessary.
4. Pour into a fridge compatible pan or bowl and allow to refrigerate for 4 hours. Scoop the ice cream into serving cups and serve with your favorite toppings.
